Chicken Satay bites

A new addition to the menu this year in the chalet, this peanut satay sauce can be used in a stir fry or simply as a dip. Here at Panoramic, we serve it up with bite size pieces of chicken as a nibble before dinner! Serves 10

Peanut Satay Sauce
1 cup peanuts
1-2 cloves garlic, minced
1 tbsp dark soy sauce
1 tbsp sesame oil
1 tbsp brown sugar
1-2 tbsp fish sauce
1 tbsp lime juice
1/2 tsp cayenne pepper
2/3 cup coconut milk

Add the peanuts to a food processor and blend for 5 minutes or until a smooth peanut butter is formed. Add the rest of the ingredients to the food processor and blend until combined.

Chicken Bites
Slice three chicken breasts into 3/4″ wide strips. Marinate the sliced chicken in 1/2 cup soy sauce, 2 tbsp sesame oil, 1 minced clove garlic, 1 tbsp minced fresh ginger for 6-8 hrs.
Drain the marinade from the chicken. Add chicken strips to flour and mix to coat. Heat a large frying pan with 1/2″ of canola oil over med-high heat. Shake excess flour from chicken strips and add to hot pan in 3 batches. Cook until light brown and flip to cook other side. Remove from pan onto paper towel to drain oil. Slice into bite-sized pieces and scatter finely slice green onion on top. Serve with Peanut Satay Sauce.
